I had some friends come to stay this weekend. They had heard the rumours about how good this recipe is and asked for a copy. Rather than write it out, I decided to add it to this site.
700gm potato quarters (2-3)
large red onion chopped
500gm chorizo (3)
4 cloves garlic
400gm butter beans
1 can of tomatos
2 bay leaves
150ml chicken stock
1 tablespoon of chillie flakes (we use 1/2)
Boil potatoes in salted water for 10 mins. Start with cold water and bring to the boil.
Fry onion and sausage in a frypan until golden. Don’t let the onion brown. Cook the Chorizo so the fat renders out, but try to prevent the bottom of the pan going dark. Cook it low and slow, but not too low. It has to render but not brown too much.
Once it turns golden, Add garlic and chilli then add potatoes, beans, tomatos, bay leaves, stock
bring to boil and simmer for 10 mins
